Impossible Pie

This pie is like a miracle pie.

Such a quick & easy mix  – which just sorts itself into 3 layers in the oven.

It has been a hit for me for many years, bringing it to many parties over time as dessert.

Preparation Time: 15 minutes

Cooking Time: 45 minutes

Makes one 24cm pie



  • ½ cup of organic plain flour
  • 1 cup of soft brown sugar or raw sugar
  • 1 cup of fresh or desiccated coconut
  • 4 free range eggs, lightly beaten
  • 2 tsp organic vanilla essence
  • 125g of organic butter, melted
  • 2 cups of lactose free milk or organic milk



  1. Lightly grease 24cm pie dish
  2. Sift organic flour into bowl
  3. Stir in brown/raw sugar, coconut, free range eggs, organic vanilla essence, organic butter & lactose free /organic  milk
  4. Pour into prepared pie dish
  5. Bake in oven for about 45 minutes or until lightly browned and set.

Serve warm or cold with cream or fruit if desired

(Recipe can be made a day ahead)

Spanish Rice

The original recipe is from Everyday Gourmet but of course, I put my own Passie twist on it :)

Spanish Rice

(Serves 4)


  • 2 chorizo, sliced into rounds or Chorizo salami slices, chopped
  • 4 tbsp. extra virgin olive oil
  • 1 onion, sliced
  • 2 cloves garlic, finely chopped
  • 2 roasted capsicums from the jar- chopped
  • 1 small red capsicum, chopped
  • 1 tbsp. smoked paprika
  • 1 pinch of saffron
  • 1 ½ – 2 cups of chicken stock
  • 1/2 cup dry white wine
  • 1.5 cups brown rice
  • Salt and pepper

(Optional: 4 chicken thighs of 400g of Herb & garlic sausages) (Optional: Organic frozen peas)

Yellow riceMethod:

  1. Cook brown rice as you would normally do(pot or rice cooker), perhaps a little drier than usual(less water)
  2. In a large deep pan heat the oil and sauté the chorizo (or Chicken) until golden on all sides.(If you are adding chicken; Remove chicken at this point) (For sausages, grill or cook seperately before beginning this process – then slice as desired)
  3. Add the onion, garlic, to the oil and sauté until the onion is soft.
  4. Add the capsicums, smoked paprika, saffron, and wine & bring to the boil.
  5. Add the rice, and gradually add the chicken stock, and cook over medium high heat, uncovered, for about 5 minutes, stirring until the rice is semi-dry but some liquid remains.
  6. (If you have chicken in this dish,Now is the time to add the chicken back into the rice or sausages).
  7. Cover and cook on stove top(or electric fry pan) for further 15 mins(stirring occasionally) or alternatively, if you have an oven proof dish or pan, place it in oven for a further 15 minutes at 180 degrees.
  8. Serve in the dish with a sprinkle of parsley.

End result is a very easy yummy dish for lunch or dinner, going beautifully with a green salad.

My family absolutely loves this dish, especially with sausages :)

Apple Cardamom Cake

I have been making this recipe for as long as I can remember. Although, it had been a while since I made it until a couple of weeks ago, I took out my old Step-By-Step Family Circle recipe book and made this cake with my youngest son Aidan.

Aidan and I spent many hours cooking in the kitchen a couple of weeks ago and I am loving spending this time with him. We fit really well together in the kitchen, both loving our food and being of service to others and pouring much love in our food preparation. He has actually helped me to appreciate and love cooking all over again.

So I will stop babbling now and actually share this recipe with you…This is how I bake it :)

Preparation Time: 30 minutes

Cooking Time: 55 minutes

Makes one 20cm round cake


  • 2 Green Apples, peeled & cored(4 if small apples)
  • ¼ cup soft brown sugar
  • 150g Organic Butter
  • ¾ cup soft brown sugar or raw sugar
  • 2 free range eggs, lightly beaten
  • 1 tsp organic vanilla essence
  • 2 cups of Organic self-raising flour or Wholemeal self-raising flour
  • 2 tsp ground cardamom
  • ½ cup of Light Lactose free milk or Organic Milk

Preparation Method:

Preheat oven to 180 degrees

Spray a 20cm round cake tin with olive oil spray or brush with melted butter Line tin with grease paper

1. Slice one apple in thin rings and finely chop the other one Place rings of apple in the base of cake tin, over lapping each piece Sprinkle with ¼ of brown sugar.

2. Using electric mixer beat melted organic butter & soft brown sugar or raw sugar in bowl until light and creamy. Add eggs gradually, beating thoroughly after each addition Add organic vanilla essence, beating until all combined Add Chopped apple and fold in with a metal spoon.

3. Using a metal spoon, fold in the sifted organic or wholemeal flour and cardamom Alternately fold in milk until just combined and the mixture is almost smooth.

Spoon mixture into prepared tin; smoothing surface

Bake for 55 minutes or until for comes out clean when inserted in centre of cake.

Leave cake in tin for 20 minutes before turning onto wire rack to cool

And..VOILA! You have a beautiful dessert which can be served with ice-cream or cream or an appetising afternoon delight with tea
